Prawn devilled eggs

    These baked stuffed eggs are a delicious light and quick starter or egg dish for brunch.

    Serves: 4 

    • 4 eggs
    • 2 tablespoons mayonnaise
    • 1 clove of garlic, crushed
    • 2 tablespoons breadcrumbs
    • 3 tablespoons milk
    • 150g cooked prawns
    • 1 bunch parsley, minced
    • 2 tablespoons butter
    • salt and pepper to taste

    1. Preheat oven to 180 C / Gas 4.
    2. Boil eggs in a pan of water for 7 to 10 minutes. Rinse under cold running water and peel immediately.
    3. Halve the eggs lengthwise. Remove the yolks and mash with a fork. Add mayonnaise, garlic, breadcrumbs, and milk. Add parsley and season with salt and pepper. Stir until well combined and smooth.
    4. Chop the prawns and add. Fill the eggs with this mixture.
    5. Top the mixture with a dab of butter and bake for 10 minutes.
