Simon Rimmer has created a delicious and healthy chicken curry that will make watching what you eat that little bit easier.
2 green or red chillies, finely chopped, more to taste
ground black pepper
4 skinless chicken breast fillets, diced
1 tablespoon low fat yoghurt
300g basmati rice, cooked
Handful fresh coriander, finely chopped, to garnish

Heat the oil in a large wok and add the onion. Gently fry them for 10 minutes until browned and softened. Add the garlic and ginger and continue cooking for a further 2 minutes. Next, stir in the turmeric, cumin, curry powder and paprika and combine the mixture well.
Add the chopped tomatoes and chillies, mix well and let the contents of the pan simmer over a medium heat for approximately 15 minutes. Season with black pepper, add the chicken, water and yoghurt. Allow the mixture to simmer for a further 15 minutes, or until the chicken is cooked through.
Share the rice amongst 4 serving dishes, top with the chicken curry mix and sprinkle with fresh coriander. Serve immediately.
