John Thomson is backing LivSmarter’s campaign to bring back the FELLAS – food-enjoying, life-loving, active sports-fans, to show men it’s cool to be a ‘bloke’ again, to be happy and to get fit and lose weight. Simon Rimmer has created a delicious and healthy chicken curry that will make watching what you eat that little bit easier.

    Serves: 4

    • 3 tablespoons olive oil
    • 1 large onion, finely chopped
    • 3 cloves garlic, minced
    • 1 (2cm) cube root ginger, finely chopped
    • 1/2 teaspoon ground turmeric
    • 1 teaspooon ground cumin
    • 2 teaspoons curry powder, heated to preference
    • 1 teaspoon paprika
    • 400g chopped tomatoes
    • 2 green or red chillies, finely chopped, more to taste
    • ground black pepper
    • 4 skinless chicken breast fillets, diced
    • 150ml water
    • 1 tablespoon low fat yoghurt
    • 300g basmati rice, cooked
    • Handful fresh coriander, finely chopped, to garnish

    1. Heat the oil in a large wok and add the onion. Gently fry them for 10 minutes until browned and softened. Add the garlic and ginger and continue cooking for a further 2 minutes. Next, stir in the turmeric, cumin, curry powder and paprika and combine the mixture well.
    2. Add the chopped tomatoes and chillies, mix well and let the contents of the pan simmer over a medium heat for approximately 15 minutes. Season with black pepper, add the chicken, water and yoghurt. Allow the mixture to simmer for a further 15 minutes, or until the chicken is cooked through.
    3. Share the rice amongst 4 serving dishes, top with the chicken curry mix and sprinkle with fresh coriander. Serve immediately.

Basmati rice is packed with slow release energy meaning it releases its sugars at a steady rate into your bloodstream. This is extremely valuable as it prevents your blood sugars surging and then crashing which can leave you feeling fatigued and craving a sweet snack.
