About this recipe: This dessert is a success by any measure! Fragrant ripe strawberries, marinated with sugar and fresh mint, then covered with homemade chantilly cream. Easy, elegant and delicious.


Serves: 4 

  • 1 small bunch fresh mint
  • 1 punnet fresh strawberries
  • 4 tablespoons caster sugar
  • 200ml whipping cream
  • 2 tablespoons icing sugar

  1. Chill a large bowl for whipping the cream (this helps to whip the cream to a greater volume). Reserve about 8 whole mint leaves for decoration and chop the remaining mint.
  2. Wash the strawberries twice in cool water, drain and dry on kitchen paper, then slice them into a bowl. Combine with the caster sugar and 3 tablespoons of the chopped mint. Stir, and place in the fridge to marinate while you whip the cream.
  3. Whip the cream with the icing sugar in the chilled bowl until very stiff. Divide the marinated strawberry mixture between 4 individual dessert bowls, and top with 2 spoonfuls of the chantilly cream and one or two mint leaves.


For added flavour, you can add 1/2 teaspoon vanilla extract to the cream midway through whipping.
