    About this recipe: Fresh berries and a creamy sweetened cheese mixture top wholemeal baguette slices for a colourful addition to your summer canape spread!

    Ingredients
    Makes: 15 to 20 slices

    • 1 wholegrain baguette
    • 300g yoghurt cheese
    • 1 tin mandarin orange slices, drained and juice reserved
    • 60g fresh raspberries
    • 60g fresh blueberries
    • 60g fresh strawberries, hulled and sliced
    • sprig of mint

    Method

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment.
    2. Slice the baguette on the diagonal, about 2cm thick. Arrange on the prepared baking tray.
    3. Toast the baguette slices in the oven for 4 to 7 minutes, till golden brown.
    4. Meanwhile, combine the yoghurt cheese and 4 tablespoons of the mandarin orange juice from the tin. Mix well till smooth.
    5. Arrange the toasted baguette slices on a serving platter. Spread the warm slices with the yoghurt cheese mixture. Top with the orange slices and berries. Finally, place a fresh mint leave on top of each slice. Serve straightaway!

    Tip

    If you don't have time to make the yoghurt cheese from scratch, use a soft, spreadable goat's cheese or even cream cheese. Enjoy!
