Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment.
Slice the baguette on the diagonal, about 2cm thick. Arrange on the prepared baking tray.
Toast the baguette slices in the oven for 4 to 7 minutes, till golden brown.
Meanwhile, combine the yoghurt cheese and 4 tablespoons of the mandarin orange juice from the tin. Mix well till smooth.
Arrange the toasted baguette slices on a serving platter. Spread the warm slices with the yoghurt cheese mixture. Top with the orange slices and berries. Finally, place a fresh mint leave on top of each slice. Serve straightaway!
If you don't have time to make the yoghurt cheese from scratch, use a soft, spreadable goat's cheese or even cream cheese. Enjoy!
