High Speed Mum's pilaf rice

    This is a simple rice to serve with the Armenian Lamb recipe I havae given you.

    Serves: 4 

    • 1.5 oz butter
    • 1 small onion (finely chopped)
    • 8.5 oz long grain rice
    • three quarters pint chicken stock
    • 3 oz currants
    • 3 oz pistachia nuts (blanched and shredded)
    • Salt & Pepper

    1. Melt two thirds of the butter in a flameproof caserole,
    2. add the onion and cook slowly until just golden-brown
    3. Stir in the rice and continue cooking for 2-3 minutes.
    4. Pour on the stock, season and bring to the boil
    5. Cover the casserole and cook in the oven at 375 F or Gas mark 5 until the rice is tender, (about 20 minutes)
    6. add the extra stock if necessary at the end and put the rest of the butter in with the currants and pistachios forking them in very carefully.


    AGA TIP - Aga users will know that when the rice has boiled it should go into the simmering oven until you are ready to stir in the remaining ingredients and serve.
