Courgettes fried with the gorgeous spices and flavours of the Middle East like honey, sultanas and almonds. Rich and flavourful side dish to accompany lamb or other meats or most any vegetarian main course.

1 tablespoon olive oil
1 medium yellow onion, peeled and cubed
4 small courgettes, quartered lengthwise
1 tablespoon minced garlic
1 tablespoon fresh grated ginger
1 tablespoon honey
2 tablespoons sultanas
1/2 teaspoon ground turmeric
1/2 teaspoon ground ginger
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon harissa
1 tablespoon almond flakes
ground black pepper to taste

In a large frying pan heat oil and fry onion over medium heat until translucent. Meanwhile, cut courgette quarters into sticks 2 to 3cm long. Add to onions and stir together, then add garlic, ginger, honey, sultanas and spices and mix.
Cover and cook over medium heat, stirring occasionally, for 8 to 10 minutes (depending on desired texture). Sprinkle with almond flakes before serving.
