Chocolate chip brioche

    Treat yourself to a continental breakfast with this rich, buttery brioche bread packed with chocolate chips. The kids love it and the adults won't complain!

    Makes: 1 loaf

    • 10g dried active yeast
    • 10ml warm water
    • 250g plain flour
    • 200g butter, softened
    • 3 eggs
    • 100g chocolate chips
    • 1 egg yolk

    1. Dissolve yeast in warm water and let sit until it goes frothy and doubles in volume (about 10 minutes).
    2. Combine flour, butter and eggs in a mixer bowl and attach dough hook of mixer. Add yeast and mix for 5 to 10 minutes; cover with a clean drying cloth and let rise for up to 3 hours.
    3. Preheat oven to 180 C / Gas 4. Knead dough again for about 1 minute. Add chocolate chips and knead again to mix in chips. Brush with egg yolk to glaze and bake in preheated oven for 30 minutes.
    4. Set aside to cool before slicing.

    very nice, not enough chocolate chips so I doubled it. very easy - made it with children  -  20 Jan 2014
