A rack of lamb does not need much preparation other than popping it in the oven. In this recipe it is prepared with honey and fresh figs - simple yet delicious.

Ingredients
Serves: 4
1 lamb rack with 8 ribs
salt and pepper
200ml honey
25g butter
300g fresh figs, quartered
Method Prep:15min › Cook:30min › Ready in:45min
Preheat oven to 200 C / Gas 6.
Salt and pepper the lamb rack and place in a roasting pan. Brush with half of the honey and roast in the preheated oven for 30 minutes.
Meanwhile simmer the figs with the remaining honey and the butter in a small saucepan.
Cut the rack and cut it along the ribs into four servings. Garnish with fig sauce and serve.
