Roast rack of lamb with figs and honey

    A rack of lamb does not need much preparation other than popping it in the oven. In this recipe it is prepared with honey and fresh figs - simple yet delicious.

    Serves: 4 

    • 1 lamb rack with 8 ribs
    • salt and pepper
    • 200ml honey
    • 25g butter
    • 300g fresh figs, quartered

    1. Preheat oven to 200 C / Gas 6.
    2. Salt and pepper the lamb rack and place in a roasting pan. Brush with half of the honey and roast in the preheated oven for 30 minutes.
    3. Meanwhile simmer the figs with the remaining honey and the butter in a small saucepan.
    4. Cut the rack and cut it along the ribs into four servings. Garnish with fig sauce and serve.
