About this recipe: Showcase summer apricots with this quick and easy tart. The strawberry jam can be replaced with apricot jam if you prefer more apricot flavour. Enjoy!


Makes: 1 (23cm) apricot tart

  • 1 puff pastry sheet
  • 4 tablespoons strawberry jam
  • 12 ripe apricots - stones removed, quartered
  • 2 large pinches soft brown sugar
  • 1 large pinch flaked almonds
  • 3 knobs butter

  1. Preheat oven to 200 C / Gas 6.
  2. Roll out puff pastry and line a 23cm tart tin or pie dish. Prick bottom with fork in a few places.
  3. Spread jam on pastry then cover with apricots in a spiral design, cut side down. Sprinkle with sugar, almonds and butter.
  4. Bake in preheated oven for 25 minutes, until golden brown. Serve warm with a scoop of vanilla ice cream.
