1 egg yolk, beaten with a bit of milk

Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment, lay out pastry sheet and cut into 4 equal size squares.
Place a spoonful of chopped plum in the centre of each pastry square, then fold corners towards each other in the centre and press together to seal the edges. Brush pastries with beaten egg and milk and place on baking tray.
Bake in preheated oven for 15 minutes, until nicely browned. Wait 5 minutes before letting them cool on a rack.
