Cod in egg and butter sauce

    In this recipe for cod Polish style, cod fillets are pan fried and served in a rich buttery sauce with hard boiled eggs and dill.

    Serves: 4 

    • 600g cod fillets
    • 2 tablespoons butter
    • salt and pepper
    • 100g butter
    • 1 onion
    • 2 hard-boiled eggs, peeled and diced
    • 2 tablespoons lemon juice
    • 1 spring onion, minced
    • 1 tablespoon minced dill

    1. Wash fillets and dry with kitchen towels. Cut into cubes.
    2. Heat 2 tablespoons butter in a frying pan and fry cod for 5 minutes. Add salt and pepper. Transfer the fillets to a plate.
    3. Add 100g butter to the pan and melt over low heat. Fry onion till translucent, then add eggs, lemon juice and a little salt.
    4. Transfer fish back into the pan and add spring onion and dill. Heat through and serve.


    Instead of cod, you can use other white fish fillets.
