Fresh fruit loaf

    A loaf cake made with freshly grated pear, apple and mashed banana. Add a little pinch of garam masala for extra flavour.

    Makes: 1 loaf cake

    • 100g dark brown soft sugar
    • 50g treacle
    • 125g butter or cooking margarine, melted
    • 175g plain flour
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • 1/2 teaspoon garam masala
    • 1/2 teaspoon bicarbonate of soda
    • 1 (115g) pot yoghurt (any flavour)
    • 1 teaspoon vanilla extract
    • 1 apple, peeled and grated
    • 1 pear, peeled and grated
    • 1 banana, mashed
    • 2 eggs

    1. Preheat oven to 170 C / Gas 3. Grease and flour a loaf tin.
    2. Beat sugar, treacle and butter in a mixing bowl. In a seperate bowl add flour, salt, baking powder, garam masala and bicarb of soda and mix well.
    3. Add yogurt and vanilla and mix well. Slowly add dry mix then add apple and pear. Add mashed banana then add eggs one at a time.
    4. Pour mix into loaf tin, place in centre of preheated oven and bake for 1 hour. Check with a skewer, and if no cake mix on skewer, remove from oven. If not done, bake a few minutes longer, about 1 hour 15 minutes total.
