Fresh Fruit Loaf

    A loaf cake made with freshly grated pear, apple and mashed banana. Add a little pinch of garam masala for extra flavour.

    Makes: 1 Loaf Tin

    • 100g dark brown sugar
    • 50g treacle
    • 125g butter or cooking margarine, melted
    • 2 eggs
    • 1 banana, mashed
    • 175g plain flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon bicarbinate of soda
    • 1/2 teaspoon salt
    • 1 teaspoon vanilia essence
    • 1 pot yogurt (any flavour)
    • 1/2 teaspoon garam masala
    • 1 apple, peeled and grated
    • 1 pear, peeled and grated

    1. Preheat oven to 170c, beat sugar, treacle and Butter in a mixing bowel. in a seperate bowl add flour, salt, baking powder, Garum Masala and Bi Carb and mix well.
    2. Add mashed banana to sugar and butter mix then slowly add eggs one at a time.
    3. add yogurt and essence and mix well, slowly add dry mix then add fruit.
    4. Pour mix in to a loaf tin that has been greased and floured, place in centre of preheated oven for 1 hour and 15 mins.


    Check after one hour using a dry skewer, if no cake mix on skewer then remove from oven.
