Kiwi loaf cake

    A moist loaf cake with both kiwi and banana. A lovely way to use kiwi, which one doesn't normally find in cake recipes.

    Makes: 1 loaf cake

    • 150g granulated sugar
    • 125g butter, melted
    • 175g plain flour
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1 banana, mashed
    • 2 eggs
    • 4 ripe kiwi fruits, peeled and grated
    • 1 teaspoon lemon juice

    1. Preheat oven to 170 C / Gas 3. Beat sugar and butter in a mixing bowl. In a separate bowl add flour, salt, baking powder and bicarb; mix well.
    2. Add mashed banana to sugar and butter and mix well. Slowly add eggs one at a time. Add grated kiwi and lemon juice.
    3. Add the wet mixture to the dry mixture; mix till just combined. Pour into a loaf tin that has been greased and floured.
    4. Place in centre of preheated oven for 1 hour.
