Kiwi loaf cake

    A moist loaf cake with both kiwi and banana. A lovely way to use kiwi, which one doesn't normally find in cake recipes.

    Makes: 1 loaf cake

    • 150g granulated sugar
    • 125g butter, melted
    • 175g plain flour
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1 banana, mashed
    • 2 eggs
    • 4 ripe kiwi fruits, peeled and grated
    • 1 teaspoon lemon juice

    1. Preheat oven to 170 C / Gas 3. Beat sugar and butter in a mixing bowl. In a separate bowl add flour, salt, baking powder and bicarb; mix well.
    2. Add mashed banana to sugar and butter and mix well. Slowly add eggs one at a time. Add grated kiwi and lemon juice.
    3. Add the wet mixture to the dry mixture; mix till just combined. Pour into a loaf tin that has been greased and floured.
    4. Place in centre of preheated oven for 1 hour.

    I wonder if this recipe has ever been tested? Followed instructions, but it was fiddly to make and a disaster. All the hallmarks of a cake with too much raising agent, cooked through but collapsing totally in the tin on removal from the oven, as well as browning too much too soon, despite the temperature being lower than suggested (adjusted for fan oven). I am an experienced cake maker, nothing like this has ever happened before.  -  02 Oct 2017
