Avocado cucumber salad with crab

    A nicely presented avocado salad with crab and cucumber. If you prefer, you can use seafood sticks instead of crab meat.

    Serves: 4 

    • 2 ripe avocados
    • 1 tablespoon lemon juice
    • 1 cucumber
    • 150g cooked crab meat
    • 2 tablespoons mayonnaise
    • 1 bunch dill, freshly chopped
    • salt and pepper

    1. Cut avocado in half lengthwise. Remove the flesh and the stone, reserving the outer shell to serve the salad in.
    2. Dice the flesh and drizzle with lemon juice.
    3. Cut the cucumber in half lengthwise and remove the seeds with a teaspoon. Dice.
    4. In a bowl combine crab, dill, avocado and cucumber; add mayonnaise and mix well.
    5. Fill avocado shells with the salad.
