Squid salad with marinated mushrooms

    If you want a budget-friendly seafood salad that can be put together in minimum time, try this squid salad using frozen squid.

    Serves: 4 

    • 1/2 onion, minced
    • 1 tablespoon butter
    • 250g squid tubes
    • 100g cheese, grated
    • 2 cloves of garlic, minced
    • 100g marinated mushrooms, sliced
    • 2 tablespoons mayonnaise
    • salt and pepper to taste

    1. Fry onion in butter till soft.
    2. Cook squid in boiling water for 3 to 4 minutes. Drain and cut into thin rings.
    3. Combine cheese, squid rings, mushrooms and onions and toss. Add salt, pepper, and mayonnaise and toss again. Serve at once or refrigerate till serving.


    Polish marinated mushrooms in a jar can be found in well assorted supermarkets.
