Beef mince flatbread

    Lavash is thin (unleavened) flatbread, thinner than pita or naan and similar to tortillas. Stuffed with beef mince and mushrooms and rolled up, it makes a great party nibble.

    Serves: 4 

    • 1 onion, minced
    • 2 tablespoons butter
    • 300g beef mince
    • 150g button mushrooms, cleaned and sliced
    • salt and pepper to taste
    • 150g shredded Cheddar cheese
    • 1 lavash flatbread (approximately 20x30 cm)

    1. Preheat the oven to 200 C / Gas 6.
    2. Heat butter in a frying pan. Fry onion till translucent. then add mince and fry till browned, about 10 minutes, breaking it up with a wooden spoon.
    3. Add sliced mushrooms and cook everything until the mushrooms start softening, about 5 minutes. Add salt and pepper.
    4. Place flatbread on your work surface. Sprinkle with cheese and top with the filling. Tightly roll up up into a log.
    5. Transfer to a baking tray and bake till the top is browned in several spots, about 10 minutes. Let cool slightly, then cut into thick slices. Serve hot or lukewarm.
