Stir fried oyster mushrooms and red peppers

    This is a light vegetarian dish of stir fried oyster mushrooms and red peppers, seasoned with ginger, honey and soy sauce. Serve as a side dish or as a main with rice.

    Ingredients
    Serves: 4 

    • 2 tablespoons butter
    • 250g oyster mushrooms, thinly sliced
    • 1 tablespoon oil
    • 1 onion, thinly sliced
    • 2 red peppers, thinly sliced
    • 1 (2cm) piece fresh ginger, thinly sliced into strips
    • 1 teaspoon honey
    • 2 tablespoons soy sauce
    • 2 tablespoons wine vinegar
    • salt and pepper to taste

    Method

    1. Melt butter in a large pan over medium heat; add sliced mushrooms and fry for about 5 minutes, stirring occasionally, until golden. Transfer the mushrooms onto a plate.
    2. Add oil to the pan; stir in sliced onion and cook until starting to soften. Add red peppers and fresh ginger; cook and stir for a few minutes.
    3. Stir in honey, soy sauce and vinegar. Simmer for one minute; add cooked mushrooms and warm through. Season to taste with salt and pepper before serving.
