Yoghurt and mint chicken skewers

    Marinating chicken in a combination of Greek yoghurt and mint ensures these kebabs are both moist and flavourful.

    Serves: 4 

    • 300g Greek yoghurt
    • 3 or 4 garlic cloves, crushed
    • 3 tablespoons finely chopped fresh mint
    • 1 tablespoon olive oil
    • salt and ground black pepper
    • 4 chicken breast fillets, cubed

    1. In a bowl, stir together the yoghurt, garlic, mint, oil and salt and pepper. Stir in the chicken pieces to coat and marinate in the fridge for at least 1 hour.
    2. Preheat a barbecue or the grill of your oven. Thread the chicken pieces onto skewers, and barbecue, turning often, until the chicken is no longer pink at the centre, about 10 minutes.


    If you have wooden skewers, soak them in water for 15 to 30 minutes before adding the chicken. This will keep them from burning on the barbecue.
