Pan fried wild mushrooms with goats cheese

    A wonderful side dish or starter of roasted chanterelle wild mushrooms, shallots and thyme, topped with goats cheese and fresh mint.

    Serves: 4 

    • 2 tablespoons butter
    • 2 to 3 shallots, finely chopped
    • 350g chanterelle wild mushrooms, cleaned and sliced
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried thyme
    • 150g goat cheese, crumbled
    • 1 bunch mint, finely chopped
    • salt and pepper to taste

    1. Melt butter in a large pan over medium heat; add chopped shallots and stir to coat in butter. Cook for 1 or 2 minutes until softened. Stir in sliced mushrooms and continue to cook until tender, about 10 minutes.
    2. Season mushrooms with oregano, thyme, slat and pepper. Scatter goat cheese on top; cover with a lid to allow cheese to melt slightly. Top with freshly chopped mint before serving.
