A fantastic festive dish! Tender chicken breasts are stuffed with mushrooms and cheese, wrapped in oil and browned to perfection.

500g chicken breast fillets
oil for cooking
1 onion, chopped
200g oyster mushrooms, thinly sliced
100g cheese, grated
salt and pepper, to taste
8 rashers bacon

Lay the chicken breasts on a sheet of cling film then cover with a second sheet. Beat lightly with a meat mallet to flatten. Remove the top piece of cling film and discard.
Warm a little oil in a frying pan over a medium heat and add the onion and mushrooms and cook and stir until soft, about 4 to 6 minutes. Remove from the heat and allow to cool before combining with the cheese.
Spoon the filling in the centre of each chicken breast fillet, season, roll it up and secure with cocktail sticks. Wrap each piece in bacon and cook in oil, turning occasionally, for about 15 minutes until the chicken is no longer pink in the centre. Serve hot or cold.
