Sweet egg yolk biscuits

    These sweet and light biscuits will melt in your mouth. The secret to the light and fluffy texture is the use of hard-boiled egg yolks.

    Serves: 14 

    • 2 hard-boiled egg yolks
    • 65g icing sugar
    • 200g softened butter
    • 1/4 teaspoon bicarbonate of soda
    • 1 teaspoon vinegar
    • 190g plain flour

    1. Preheat the oven to 190 C / Gas 5.
    2. Beat the two egg yolks together with the icing sugar, butter, bicarbonate of soda, vinegar and flour until smooth.
    3. Shape the dough into a circular log 5cm in diameter. Cut into rounds with a 2cm thickness. Arrange on a greased baking tray and press with a fork.
    4. Bake for 10 to 15 minutes until golden brown.


    You can add a pinch of salt to the dough to enhance flavour.
