1 bunch spring onions, coarsely chopped
125g plain flour
salt and pepper to taste
1 pinch nutmeg, optional
500g fish of choice, cubed
100g mozzarella cheese

Preheat the oven to 200 C / Gas 6.
In a small frying pan, add a little water and cook and stir the spring onion on low heat for 7 to 10 minutes.
Beat the eggs, slowly adding the milk, flour, salt, pepper and nutmeg. Mix well.
Cut the fish into small chunks and arrange in the base of a casserole dish. Add the onion, half of the cheese and pour the egg mixture over the fish evenly. Top with the remaining mozzarella cheese.
Bake for 20 minutes. After 20 minutes, lower the heat to 180 C / Gas 4 and bake for a further 15 minutes.
If using fresh mozzarella cheese, try substituting the milk for the whey.
White flaky fish such as cod or haddock work great in this recipe.
