Smoked salmon and cod starter

    This is a festive starter for your Christmas or New Year's dinner. A dome of smoked salmon covers a filling of boiled cod mixed with homemade herb mayonnaise.

    Serves: 4 

    • 1 fish stock cube
    • 400g mild white fish (cod)
    • 1 bunch parsley, minced
    • 1 egg yolk
    • 1 tablespoon prepared mustard
    • 2 tablespoons olive oil
    • salt and pepper
    • 4 slices smoked salmon

    1. Prepare the fish stock according to instructions and simmer the cod for 15 minutes. Let cool a little, then drain and remove skin and bones.
    2. Mash the cooked cod wit a fork and add parsley. In a small bowl whisk egg yolk, mustard, oil, salt and pepper till smooth. Add to the fish and stir well to combine.
    3. Take 4 small dome shaped moulds or cups and line them with the smoked salmon. Chop any left over salmon and stir it into the cod mix.
    4. Distribute the filling among the moulds and chill till serving. Unmould just before serving.
