Zesty prawn parcels

    An easy little dish that can be made in advance and cooked in practically no time. Serve with rice and mangetout for a yummy midweek supper.

    Ingredients
    Serves: 4 

    • 20 prawns
    • 250ml orange juice
    • juice of 1 lemon
    • 1 heaping teaspoon paprika
    • 1 heaping teaspoon curry powder
    • a few threads of saffron (optional)

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Place all ingredients in a plastic food-safe bag, toss to mix well and marinate in fridge for at least 2 hours.
    2. Preheat oven grill to high.
    3. Remove prawns from bag (discard marinade) and place 5 prawns each in the centre of 4 aluminium foil squares. Fold in to seal foil parcels and bake in preheated oven for about 10 minutes. Prawns should be opaque and pink after cooking.
