Penne with pesto, sun-dried tomatoes and feta

    A pasta dish that always pleases young and old picky eaters alike, plus it's delicious! Meditteranean flavours combine beautifully with this penne pasta dish.

    Serves: 3 

    • 300g penne pasta
    • 100ml water
    • 1 teaspoon arrowroot or cornflour
    • 1/2 vegetable stock cube
    • 3 tablespoons pesto
    • 40g sun dried tomatoes, sliced
    • 100g feta cheese, cubed
    • 1 tablespoon chopped fresh basil

    1. Bring a large pan of salted water to the boil. Add penne and cook until al dente, 10 to 12 minutes; drain. Reserve pasta in pan.
    2. In a small saucepan dissolve arrowroot or cornflour and stock cube in the water over low heat and simmer, stirring, until thickened. Add pesto and tomatoes and stir.
    3. Combine penne, sauce and feta in pan and stir together. Cover and cook over medium heat for 1 to 2 minutes. Sprinkle with basil and serve.
