Vegan smoothie bowl with banana and carrot

    This is a smoothie bowl without any added sugar. You can also make it more liquid by adding more almond drink and make it a drinkable smoothie.

    Ingredients
    Serves: 1 

    • 2 Medjool dates
    • 150g carrot, peeled and chopped
    • 1 frozen banana, cut into pieces
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground ginger
    • 150ml unsweetened almond vanilla drink
    • 2 tablespoons desiccated unsweetened coconut
    • 1 tablespoon dried goji berries

    Method

    1. Soak dates for a few minutes in cold water to soften, then drain and chop.
    2. Add carrot, banana, dates, cinnamon, ginger and almond drink to blender and puree till smooth. Add more almond drink to taste.
    3. Pour in a bowl and sprinkle with coconut and goji berries.
