About this recipe: An elegant starter or light lunch dish, avocados are filled with prawns and lightly dressed in a sesame-mango dressing.


Serves: 4 

  • 2 ripe avocados, stones removed and halved
  • 100g cooked, peeled prawns
  • 3 tablespoons sesame oil
  • 2 tablespoons lemon juice
  • 2 tablespoons mango nectar
  • 1 to 2 pinches curry powder
  • 2 mint leaves, chopped

  1. To prepare dressing combine the sesame oil, lemon juice and mango nectar in a small bowl. Season with curry powder and chopped mint.
  2. Place a few prawns in each avocado half and drizzle with mango dressing. Serve immediately.
