Mirabelle plum jam

    Mirabelle plums are a prized variety in France. If you're lucky to find them or have a tree of your own, preserve the flavour with this simply delicious plum jam recipe. Note: As this is a French confiture recipe, it contains more fruit and won't set as much as a regular jam would.

    Makes: 4 to 5 jars

    • 1kg ripe mirabelle plums, stones removed and halved
    • 800g jam sugar
    • 1 lemon, juiced

    1. Place plums, sugar and lemon juice in a large heavy-bottomed pan or casserole. Set over low heat and bring to a gentle simmer, stirring occasionally. Skim off any foam.
    2. Ladle jam into hot sterlised jars and seal. Let cool at room temperature for 12 hours, then store in a cool, dark place for up to 1 year.
