Makes: 12 to 15 biscuits
115g plain flour
100g porridge oats
1/2 teaspoon baking powder
1 large pinch salt
120g soft brown sugar
50g softened butter, diced
1 teaspoon vanilla extract
1 large egg
55g ground almonds

Preheat oven to 180 C / Gas 4 and line a baking tray with baking parchment.
In a medium bowl combine flour, oats, baking powder and salt. In another cream together sugar with butter till light and fluffy. Add vanilla and egg, mix well, then mix in the flour mixture and almonds. Drop large spoonfuls of mixture, spaced 2cm apart, on baking tray.
Bake in preheated oven for 10 to 12 minutes, until nicely browned.
Made these for my husband in preference to shop bought biscuits. He loves them! Will definitely make them again, but I only used 90g of sugar and added some cinnamon. Also used less ground almonds as it's not his favourite flavour! 🙄. - 12 Oct 2016
