Green apple Parmesan stacks

    This starter is a an new take on apples with cheese. Apples and Parmesan are stacked and drizzled with a tangy mustard sauce.

    Ingredients
    Serves: 4 

    • 1 lime, juiced
    • 1 lemon, juiced
    • 1 branch lemon balm, chopped
    • 1 (3cm) piece root ginger, chopped
    • 2 tablespoons wholegrain mustard
    • 1 bunch chervil
    • 2 tablespoons honey
    • 100ml olive oil
    • 4 Granny Smith apples
    • 50g Parmesan cheese, thinly sliced

    Method

    1. Prepare the sauce by placing the lime juice, lemon juice, lemon balm, root ginger, wholegrain mustard, chervil, honey and olive oil in a blender or food processor and mixing until smooth.
    2. Wash and core the apples. Cut into 5mm thick slices. Cover the apples with sauce and marinate in the refrigerator for about 15 minutes.
    3. Make the towers by stacking Parmesan and apple slices. Place on 4 salad plates. Drizzle with the remaining sauce and place the extra sauce in a spoon on each plate.
