About this recipe: This creamy Spanish rice pudding is infused with cinnamon, orange and lemon. Sprinkled with ground cinnamon, it is delicious warm or chilled!

Serves: 4 

  • 500ml full fat milk
  • 50g caster sugar
  • 1 stick cinnamon
  • 5cm piece lemon rind
  • 5cm piece orange rind
  • 150g short-grain rice
  • ground cinnamon, to serve

Prep:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Gently heat the milk in a saucepan. Add the sugar, cinnamon stick and lemon and orange rind. Infuse for 5 minutes.
  2. Bring to a simmer and add the rice. Stir well. Continue simmering for about 20 minutes, or until the rice is tender. Do not stir too much!
  3. When the rice is tender, remove the flavourings. Serve warm or chilled with ground cinnamon sprinkled on top.

This is far too much rice for 500ml of milk, 50 grams of rice would be sufficient. - 13 Jun 2013
