Fairy princess birthday cake

    This is a fun birthday cake to make for little girls, and they can help to build the walls and decorate the cake with princesses or fairies. If you only have 1 cake tin, bake half of the mixture, the let it cool and umould the cake. Bake the second layer in the same tin.

    Ingredients
    Makes: 1 cake

    • 125g dark chocolate
    • 115g butter, softened
    • 100g caster sugar
    • 3 eggs, separated
    • 60g plain flour
    • 1 bar white chocolate
    • 1 punnet raspberries
    • 4 waffle cones
    • 50g pink coloured sugar
    • pink food colouring
    • 2 to 3 figurines of fairies or princesses for decoration

    Method

    1. Preheat the oven to 180 C / Gas 4. Butter two 20cm round cake tins.
    2. Melt the dark chocolate in a saucepan over very low heat. Remove from the heat. Pour the chocolate into a mixing bowl and stir in the butter until smooth.
    3. Add the butter and stir until smooth. Stir in caster sugar, and then stir in the egg yolks, one at a time. Finally stir in the plain flour.
    4. Beat the egg whites until very stiff, then fold them into the cake mixture.
    5. Tip mixture to equal part in the prepared tins. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 35 minutes. Allow to cool for a few minutes. Unmould carefully, then cut one of the cakes into a square smaller than the round cake and place it on top.
    6. Melt the white chocolate in a saucepan over very low heat. Roll each waffle cone in the white chocolate to coat it evenly all around, then in the pink sugar. Place the cones upright on a plate and chill in the refrigerator until the white chocolate is no longer runny, about 15 minutes.
    7. Add a drop of pink food colouring to the remaining white chocolate, and spread over the top of the square cake. Once the coating on the cones has set, place them at the 4 corners of the square cake.
    8. Make rampart walls of raspberries between the cones and on top of the square. Place a raspberry at the top of each cone.
    9. Add figurines of fairies or princesses. Refrigerate the cake until serving.
