Banana muesli dessert

    This layered dessert is full of fibre and nutrients and sweetened with honey.

    Ingredients
    Serves: 4 

    • 100g muesli
    • 2 tablespoons honey
    • 2 to 4 tablespoons dessicated coconut
    • 250g banana, pureed
    • 3 gelatine sheets
    • 250g natural yoghurt or coconut flavour
    • coconut aroma (if using natural yoghurt)
    • 2 bananas
    • lemon juice

    1. Preheat your oven to 160 C / Gas 3. Line a baking tray with greaseproof paper.
    2. In a bowl mix muesli, honey and 2 tablespoons dessicated coconut. Place little heaps of the mixture on the baking tray and bake for 15 minutes.
    3. Meanwhile place the banana puree and gelatine sheets in a small saucepan and heat slowly over very low setting, stirring every so often till dissolved. Remove from the hob.
    4. If using natural yoghurt, mix it with coconut aroma and 2 tablespoons desiccated coconut in a bowl. Take the muesli out of the oven. Remove the saucepan from the hob. Slice the bananas and drizzle with lemon juice.
    5. Divide the yoghurt among 4 tall glasses, then the pureed banana mixture. Top with 3 to 4 slices banana in each glass, followed by muesli and 2 more slices banana to decorate. Refrigerate till set and well chilled.
