Bring a large saucepan of water to the boil with the salt, and cook the spaghetti until tender with a bite at the centre, according to the packet instructions. Drain.
Meanwhile, beat the eggs in a bowl with a fork, and stir in the grated Parmesan cheese (reserving 1 tablespoon for serving) and the black pepper. Set aside.
Meanwhile, heat the olive oil in a large frying pan over medium heat and cook and stir the lardons until crisp, about 5 minutes. Pour the cooked, drained spaghetti into the frying pan, and cook and stir for 1 minute, until the pasta is coated with oil.
Remove the frying pan from the heat and stir the beaten egg mixture into the hot pasta. Serve on heated plates sprinkled with the remaining grated Parmesan cheese.
