Fennel pilau rice

    A quick and tasty pilau rice recipe that makes a great accompaniment to your favourite curry dish.

    Serves: 4 

    • 2 1/2 tablespoons butter or margarine
    • 1 medium onion, finely chopped
    • 1 teaspoon fennel seeds
    • 1 teaspoon cumin seeds
    • 2 cardamon pods
    • 4 cloves
    • 1 bay leaf
    • 110g basmati or long grain rice
    • 300ml vegetable stock

    1. Heat 1 1/2 tablespoons butter in a large frying pan and add the onion and fennel and cumin seeds. Cook until onion is browned and tender.
    2. Stir in the cardamom pods, cloves and bay leaf and cook over low heat for a couple more minutes. Add the rice and mix in thoroughly.
    3. Add stock and bring mixture to the boil. Reduce heat to simmer, cover pan (using tin foil if need be) and cook for 10 minutes.
    4. Uncover, remove cardamom pods and cloves (if possible) and stir in remaining butter.


    Soak or wash the rice in cold water before cooking to give it a fluffy finish.
