Raisin cakes

    Lovely sponge cakes with gorgeous raisins enclosed within! Can be chilled or had lovely and warm, straight from the oven. Yum!

    Makes: 10 to 15 cakes

    • 150g margerine or butter
    • 150g caster sugar
    • 3 eggs
    • 150g self raising flour
    • 75g raisins (or to taste)

    Prep:15min  ›  Cook:15min  ›  Extra time:30min cooling  ›  Ready in:1hr 

    1. Preheat oven to 190 C / Gas 5. Grease a muffin tin (or use silicone cases).
    2. Cream the butter and the sugar until light and fluffy. Beat in the eggs, then stir in the flour and raisins. Divide mixture between the prepared tin.
    3. Bake in the oven for 15 to 30 minutes, depending on your oven. Bake till browned.


    For step 2 I find it easier to mix if you use a whisk

    My family and I absolutly love raisin cupcakes and this recipe is brilliant , the only thing I did change was the amount of raisins added we did put more in because my family love raisins  -  16 Aug 2014


    instead of 3 eggs i used 2 as an experiment i think this helps with the flavour but overall a great recipe  -  06 Apr 2014


    Cake turned out very nice. I like the recepie very easy to follow. I used granulated suger instead caster sugar as i didnt have it but still it was yummy. 😊  -  23 May 2015
