Raisin cakes

Lovely sponge cakes with gorgeous raisins enclosed within! Can be chilled or had lovely and warm, straight from the oven. Yum!

My family and I absolutly love raisin cupcakes and this recipe is brilliant , the only thing I did change was the amount of raisins added we did put more in because my family love raisins

instead of 3 eggs i used 2 as an experiment i think this helps with the flavour but overall a great recipe

Cake turned out very nice. I like the recepie very easy to follow. I used granulated suger instead caster sugar as i didnt have it but still it was yummy. 😊

Thank you very much for sharing this wonderful recipe! Made it with 130g granulated sugar, and added 100g sweetened cranberries, 100g white choc chips and 50g desiccated coconut. Cakes are fluffy and tastes delicious. Thank you!

Like these a lot. I didn't have caster sugar, so I subbed with 50\50 icing\granulated and it was fine. Really easy to make and so delicious they won't last a day in our house. I got 12 cakes from it.
