Preheat a barbecue, and lightly grease the grate. Alternatively, heat the grill to high heat.
Season the chops with salt and pepper on both sides, then sprinkle generously with lime and lemon juice.
Cook the pork chops just until no longer pink at the centre, about 5 minutes per side depending on thickness. Sprinkle over the tarragon at the end of the cooking and serve.
