Mince with courgette and feta

    I often make a big batch of this Mediterranean style mince baked in the oven with courgette, feta cheese and olives. It freezes well and it is great to have in the freezer, when there is no time to cook dinner. Serve with rice or potato wedges.

    Serves: 8 

    • 500g mince (pork or beef, or a mixture of both)
    • 1 onion, minced
    • 2 garlic cloves, minced
    • 2 to 3 courgettes, thickly sliced
    • salt and pepper to taste
    • 1 teaspoon dried oregano
    • 1 (310g) jar green chilli peppers, drained
    • 1 (300g) jar green olives, pitted and rained
    • 200g feta cheese

    1. Preheat oven to 200 C / Gas 6.
    2. In a non-stick frying pan, brown the mince for 5 minutes, breaking it up with a spoon while frying. When browned, take it out and transfer to a large baking dish.
    3. In the same frying pan, saute onion and garlic until translucent. Add courgettes and fry until soft, about 5 minutes.
    4. Add courgettes, onions and garlic to the minced meat in the dish. Season with salt, pepper and oregano. Evenly distribute chillies and olives on top and crumble feta cheese over.
    5. Bake until feta is lightly browned, about 20 minutes.
