Cod Parisienne

    Cod is simply breaded, pan fried and dressed with shop-bought passata. This is a recipe for two, ready in less than 15 minutes and always delicious.

    Serves: 2 

    • 2 fresh cod fillets
    • salt and ground black pepper
    • plain flour
    • 2 eggs
    • 1 generous tablespoon crème fraîche
    • 1 to 2 tablespoons grated Parmesan cheese
    • 45g butter
    • 4 tablespoons passata or tomato pasta sauce

    1. Wash and dry the fish and season with salt and pepper. Dredge the fillets in a little flour, and tap them to remove the excess.
    2. Beat the eggs, crème fraîche and Parmesan cheese in a bowl, and place the fillets in the bowl.
    3. Melt the butter in a large frying pan, and fry the cod fillets until the fish flakes easily with a fork, 3 or 4 minutes each side.
    4. Serve with the tomato sauce spooned over each fish fillet.
