    About this recipe: A vegetarian chilli made with Quorn® mince and a few other storecupboard essentials. Simple, easy and quick to make.

    Ingredients
    Serves: 4 

    • 1 pack Quorn mince
    • 1 (400g) tin chopped tomatoes
    • 1/2 a tin tomato purée
    • 1 (400g) tin kidney beans
    • 4 to 5 jalapenos (or 2 tablespoons of jarred)
    • 2 teaspoons mild chilli powder (or to taste)

    Method
    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Simmer Quorn mince on a med-low heat in chopped tomatoes and add the tomato purée, stirring occasionally. Add a pinch of salt and pepper. After 5 minutes add the kidney beans.
    2. When sauce begins to bubble, add jalapenos and the chilli powder (I found 2 teaspoons to be quite hot but you may add more or less if desired).
    3. Allow mix to simmer for another 10 minutes, stirring occasionally.

    Serving suggestion

    Serve with rice, for a delicious dinner or with tortilla chips for a dipping snack at a party. You may add a half a tablespoon of Marmite to thicken the mix.
