About this recipe:
A vegetarian chilli made with Quorn® mince and a few other storecupboard essentials. Simple, easy and quick to make.
1 pack Quorn mince
1 (400g) tin chopped tomatoes
1/2 a tin tomato purée
1 (400g) tin kidney beans
4 to 5 jalapenos (or 2 tablespoons of jarred)
2 teaspoons mild chilli powder (or to taste)
- Simmer Quorn mince on a med-low heat in chopped tomatoes and add the tomato purée, stirring occasionally. Add a pinch of salt and pepper. After 5 minutes add the kidney beans.
- When sauce begins to bubble, add jalapenos and the chilli powder (I found 2 teaspoons to be quite hot but you may add more or less if desired).
- Allow mix to simmer for another 10 minutes, stirring occasionally.
Serve with rice, for a delicious dinner or with tortilla chips for a dipping snack at a party. You may add a half a tablespoon of Marmite to thicken the mix.
