Pork fillet with aubergine

    Pork fillet in a tomato sauce with aubergine is an easy and no fuss weeknight dinner. It goes well with roasted potatoes, rice, bulgur wheat or pasta.

    Ingredients
    Serves: 4 

    • 3 tablespoons olive oil
    • 1 aubergine, cubed
    • 4 large onion, sliced
    • 2 garlic cloves, minced
    • salt and pepper
    • 800g pork fillet, cubed
    • 2 to 3 tablespoons tomato puree
    • 300ml boiling water
    • paprika powder
    • ground cumin
    • dried oregano
    • minced fresh parsley or dill

    1. Heat 2 tablespoons of the olive oil in a large frying pan. Fry aubergine, onion and garlic till lightly browned. Add salt and pepper. Remove from the pan.
    2. Heat the rest of the olive oil and brown the meat on all sides. Add salt and pepper.
    3. Dilute the tomato puree in the boiling water and add to the meat. Let simmer for 10 minutes.
    4. Return the veg back to the pan, add the spices season to taste with salt and pepper. Cover and simmer for a further 15 minute. Sprinkle with parsley and serve hot.
