Marinated mozzarella and prosciutto bites

    A delicious little nibble! Fresh balls of mozzarella are marinated, then wrapped in prosciutto with a leaf of fresh basil. These are always a success at any party.

    Makes: 30 to 40 bites

    • 100ml olive oil
    • 1 large garlic clove, crushed
    • 1/2 red or green pepper, minced
    • 1 pinch chilli powder
    • salt and pepper to taste
    • 30 to 40 small mozzarella cheese balls
    • 10 to 15 slices prosciutto di Parma, cut in half lengthways
    • 1 bunch fresh basil

    1. Prepare the marinade: Pour the olive oil into a small bowl. Whisk in the garlic, minced pepper and the chilli powder. Season lightly with salt and black pepper. Add the mozzarella balls, stir gently, and marinate for 30 minutes in the fridge.
    2. Drain the mozzarella balls, and wrap each one in a piece of prosciutto with a basil leaf tucked inside. Secure with a skewer.
