About this recipe: These fritters with sweetcorn and Gruyere cheese are a delicious side dish for a variety of meals. Quick and easy to make and the kids love them!

Serves: 4 

  • 100g plain flour
  • 1 egg
  • 100ml milk
  • 1 pinch caster sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 100g frozen sweetcorn kernels, thawed
  • 2 tablespoons oil
  • 50g Gruyere cheese, grated

  1. Sift the flour into a bowl. Make a well in the centre with your fist and add the egg. Mix with a fork and gradually add milk, until the batter is smooth. Add sugar, salt, pepper and sweetcorn and mix well.
  2. Heat oil in a frying pan and add 1 tablespoon of the batter for each corn fritter. Fry over medium-low heat on each side for a few minutes, until the fritters are golden brown. Take out of the pan and place on kitchen paper.
  3. Place the fritters onto a lightly greased baking tray and sprinkle with Gruyere cheese.
  4. Pop under the grill for about 5 minutes until the cheese is melted and golden brown.

We all enjoyed these, especially the kids. Easy to make. Used medium cheddar cheese rather than buying a special one and was still yummy. Will definately make again. - 01 Sep 2015
