About this recipe: This veggie nut roast is made with mixed nuts, black beans and courgettes instead of meat. It is fantastic the next day sliced and in a sandwich.

Serves: 6 

  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 leek, thinly sliced
  • 2 stalks celery, diced
  • 2 courgettes, diced
  • 1 tin black beans, rinsed and drained
  • 50g plain flour
  • 120g mixed nuts, ground (e.g. hazelnut, almond, cashew)
  • 2 eggs, lightly beaten
  • 4 tablespoons chopped fresh parsley

  1. Preheat oven to 190 C / Gas 5 and lightly grease a large loaf pan.
  2. In a frying pan, heat the oil then add the onions, garlic, leek, celery and courgettes and cook and stir until soft. Set aside and let cool for 5 minutes, stirring occasionally.
  3. Place black beans into a little bowl and mash with a fork.
  4. Add the bean paste, flour, nuts, eggs and parsley to the pan and mix well. Transfer mixture to prepared loaf pan and smooth the top.
  5. Bake for 50 minutes or until the loaf is firm and golden on the top. Remove from the oven and serve hot, or allow to cool and serve cold.
