Bread pudding with no milk or eggs

    Just how my granny made it... This nicely spiced bread pudding is made with just butter, no milk or eggs.

    Serves: 8 

    • 1 loaf stale white bread
    • 100g butter
    • 200g sugar, white or brown
    • 300g sultanas or mixed fruit
    • 1 teaspoon nutmeg (or to taste)
    • 1 teaspoon mixed spice (or to taste)
    • 2 tablespoons brown sugar to spinkle over the top

    1. Preheat oven to 180 C / Gas 4.
    2. Place the stale bread in a mixing bowl and cover with water for about an hour.
    3. Squeeze out as much water as you can then add the butter, 200g sugar, fruit and spices, and mix well.
    4. Grease a suitable sized dish, ensuring mixture almost fills tin. Sprinkle brown sugar over the top and place in the middle of oven for about 1 hour and 20 minutes. Keep checking as cooking time will vary depending on how deep the dish is.

    Fab recipe - I had some 2 day old bread rolls that I had to use up and the recipe worked really well. I didn't tweak the recipe at all - perfect just as it is!  -  20 Aug 2013


    You always buy too much bread over festive period. A perfect way of using it up without throwing it away. Use up the unused bread rolls in the same way. I added a touch of ginger with it for that extra touch of spice.  -  30 Dec 2013
