Bacon and avocado salad

    This mixed salad with lettuce, avocado, red peppers and bacon serves well as a light lunch or salad on the side.

    Serves: 2 

    • 4 rashers bacon
    • 1 avocado, stoned
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon honey
    • 1 tablespoon Worcestershire sauce
    • 2 tablespoons water
    • salt and pepper, to taste
    • 1 handful rocket leaves
    • 1 handful spring salad greens
    • 1 red pepper, sliced
    • 2 spring onions, sliced

    1. In a large frying pan over a medium heat, add the bacon and cook until evenly browned and crisp. Transfer to kitchen paper and blot away the excess oil. Set aside to cool.
    2. In a bowl mash the avocado flesh with a fork and mix with vinegar, honey and Worcestershire sauce. Add water, salt and pepper and stir well until smooth.
    3. Place rocket, spring greens, red pepper and spring onions into a large salad bowl. Add the avocado dressing and toss well.
    4. Just before serving crumble bacon on top.
