Minced lamb stew

    A hearty stew with lamb mince, green pepper and potatoes, and a generous dash of whisky. Tastes even better the next day!

    Serves: 6 

    • 1 tablespoon oil
    • 1 onion, chopped
    • 2 garlic cloves, minced
    • 500g minced lamb
    • 1 tablespoon dried oregano
    • 1 dash whisky
    • 8 new potatoes, cut in wedges
    • 2 green peppers
    • 1 (400g) tin diced tomatoes
    • 1L beef or lamb stock
    • salt and pepper to taste

    1. In a large saucepan heat oil and saute onions and garlic until softened. Add lamb mince and fry until browned while breaking it apart with a spoon. Stir in oregano and fry for another minute.
    2. Pour in a generous dash of whisky and bring to the boil. Add potatoes, green pepper, tomatoes and stock and give it a good stir.
    3. Bring to the boil, reduce the heat, cover and simmer for 1 hour until flavours are well combined. Season with salt and pepper to taste and serve.

    Make ahead:

    The stew tastes even better the next day and is therefore well prepared ahead.
