Nordic not Niçoise salad

    A contemporary take on the continental Niçoise salad.

    • 3 tablespoons Garner’s Sweet Pickled Baby Onions, drained
    • 1 cos lettuce
    • 4 eggs
    • 12 cherry tomatoes, halved
    • 8 baby new potatoes, boiled
    • 1 hot smoked mackerel, skinned and flaked
    • 1/3 cucumber, sliced
    • 125g green beans, blanched and drained
    • freshly milled black pepper
    • 1 tablespoon pickled onion vinegar
    • 4 tablespoons rapeseed oil
    • mustard to taste
    • salt and pepper to taste
    • Dash of runny honey

    1. Ensure all greens are rinsed thoroughly in cold running water as appropriate to the ingredient prior to preparation.
    2. Boil the baby potatoes and eggs and leave to cool.
    3. Tear the lettuce into manageable leaves.
    4. Peel and quarter eggs and set aside.
    5. Slice, dice or chop ingredients as you wish to creatively layer a beautiful salad on the lettuce leaves with the flaked fish and top with eggs and pickled onions.
    6. Mix the pickled onion vinegar, rapeseed oil and runny honey to make the dressing. Add mustard and seasoning to taste and drizzle over salad.

    Serving suggestion

    Serve with rustic bread to mop up dressing.
